In Slovenia, winter is the perfect season for making a “kompot”. When I was young, my mother used to make fruit compotes. This was a great way to get rid of rotting fruits. It was as simple as cutting the fruits into cubes or pieces and boiling them for a few minutes in water.
The aroma of the fruit would fill the house when it was cooking. It was delicious and my mum didn’t even add spices. This was a snack that we used to eat in the afternoon, but why not have it as breakfast too? Porridge and muesli are my usual breakfast choices, but I wanted to try something new. One day I had this brilliant idea. Why not make a fruit sauce with almond butter and quark? So I made it!
Fruit compote with almond butter and quark
Prepare this delicious breakfast in just 5 minutes. Cook it for another 5 mins. Total time 10 mins. Servings: 2. Author: Petra Kravos
Ingredients
- Organic pear
- Organic apple
- A sprinkle of raisins
- A sprinkle of Cinnamon
- vanilla extract
- I use Meridian almond butter.
- 2 tbsp low fat quark
- Flaxseed, 1 tablespoon
- Water
Directions
- Add the pear, apple and pears to a medium-sized pan.
- Just enough water to slightly cover the fruit.
- Boil raisins, vanilla and cinnamon for 5 minutes.
- Let the mixture cool slightly, then serve with almond butter or quark and flaxseeds.
- If you can find frozen blueberries, decorate with them.
Notes
Spices can be added to the mix. This recipe will make enough to last two days. You can try using cloves, for instance. You can use this compote whenever you want. Just store it in your fridge.
